Ingredients

  • 400 g cooked and drained chickpeas
  • 1 tbsp tahini
  • 1 clove garlic
  • 1 lemon lemon juice (Juice of 1 lemon)
  • 1 tbsp extra virgin olive oil (Use for blending and the serving drizzle)
  • 60 g cold water
  • 1 tsp ground cumin
  • salt (To taste)
  • paprika (To garnish)

Steps

  1. 1

Place the garlic in the Thermomix or similar mixing bowl. Chop for 3 seconds at speed 5.

  2. 2

Add the chickpeas, tahini, lemon juice, ground cumin, and salt.

  3. 3

Blend for 30 seconds at speed 6. Scrape down the sides of the bowl halfway through blending so the mixture processes evenly.

  4. 4

Add the olive oil and cold water little by little.

  5. 5

Blend for 1 minute at speed 7, until the hummus is very creamy.

  6. 6

Check the texture. Add a little more water if you want a smoother hummus, then blend briefly as needed.

  7. 7

Serve with a drizzle of olive oil and a sprinkling of paprika.

Notes

Using water instead of additional oil reduces calories without losing creaminess. Reserved chickpea cooking water can be used for a silkier texture. Serve with vegetable sticks for a healthy snack.
