Indian Masala Cabbage

Ingredients
- 1 Cabbage (medium-sized, finely shredded)
- 2 tbsp Cooking oil
- 1 tsp Cumin seeds
- 2 Green chilies (slit or chopped)
- 1 inch Ginger (finely chopped or grated)
- 0.5 tsp Turmeric powder
- 1 tsp Red chili powder
- 1 tsp Coriander powder
- Salt (to taste)
- 0.5 tsp Garam masala
- 2 tbsp Fresh cilantro (chopped for garnish)

Heat 2 tablespoons of oil in a large pan or kadai over medium heat.

Add 1 teaspoon of cumin seeds and let them sizzle until fragrant.

Add the chopped ginger and slit green chilies, sautéing for about 30 seconds until the raw smell of ginger disappears.

Add the finely shredded cabbage to the pan and stir well to coat with the oil and aromatics.

Add 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, and salt to taste.

Stir the spices into the cabbage thoroughly. Cook on medium-low heat, stirring occasionally, for about 8-10 minutes or until the cabbage is tender but still retains a slight crunch.

Sprinkle 1/2 teaspoon of garam masala over the cabbage and mix well.

Garnish with freshly chopped cilantro and serve hot.
Notes
This dish is best served with hot rotis, parathas, or as a side dish with dal and rice. Do not overcook the cabbage to avoid it becoming mushy.
