Creamy Onion Pasta
A rich and comforting pasta made with slow-roasted caramelized onions, roasted garlic, and creamy cheese, finished with sun-dried tomatoes and a touch of balsamic glaze.

Ingredients
- 3 yellow onions (large, thickly sliced)
- 1 cabeça garlic (top cut off for roasting)
- 3 tbsp olive oil (for roasting the onions and garlic)
- 250 g ricotta cheese (or another creamy cheese for the sauce)
- 400 g pasta of your choice (such as rigatoni or penne)
- 0.5 cup sun-dried tomatoes (chopped)
- balsamic glaze (for finishing)
- salt and black pepper (to taste)
- 0.5 cup pasta cooking water (reserved to adjust the sauce consistency)

Preheat the oven to 200°C (400°F).

In a baking dish, place the sliced onions and the head of garlic with the top cut off. Drizzle generously with olive oil, salt, and pepper.

Roast for about 35-45 minutes, or until the onions are well browned and caramelized and the garlic is soft.

While the vegetables are roasting, cook the pasta in boiling salted water according to the package instructions until al dente. Reserve some of the cooking water before draining.

In a blender or food processor, place the roasted onions, squeeze the roasted garlic cloves out of their skins, and add the creamy cheese.

Blend until smooth. If it's too thick, add a little of the reserved pasta water to reach the desired consistency.

Mix the creamy sauce with the cooked pasta in a large pot over low heat.

Add the chopped sun-dried tomatoes and toss well with the pasta.

Serve immediately with a drizzle of balsamic glaze on top.
Notes
The onions should be roasted slowly to develop their natural sugars. If you prefer a lighter sauce, you can substitute the ricotta with plain Greek yogurt or light cream cheese.
