Weights are estimates. Together, the ingredients weigh about 240 g before cooking, which is about 240 g per serving.
Steps
In a bowl, combine the cottage cheese, flour, a little baking powder, sweetener to taste, and egg white. Mix until smooth.
Heat a frying pan and add a little butter, spreading it over the surface.
Carefully spoon the batter into the pan, cover with a lid, and cook for about 5 minutes. Adjust the timing to your stovetop: the tops of the pancakes should no longer be runny and should begin to set.
Flip the pancakes once they release easily from the pan. Cook for another 4–5 minutes, covered or uncovered, until golden brown.
Serve the pancakes with raspberries and sugar-free caramel, or other favorite toppings.
