Ingredients

  • 400 g plain flour
  • 7 g dried yeast
  • 50 g granulated sugar
  • salt (A pinch)
  • 180 ml lukewarm milk
  • 1 egg (For the dough)
  • 50 g butter (Melted, for the dough)
  • 1 tsp vanilla extract (For the dough)
  • 1 egg (For brushing the loaf before baking)
  • 80 g butter (Softened, for the filling)
  • 100 g brown sugar (For the filling)
  • 2 tbsp ground cinnamon (For the filling)
  • 80 g powdered sugar (For the glaze)
  • 2 tbsp milk (For the glaze)
  • vanilla (A little, for the glaze)

Steps

  1. 1

Place the flour, salt, granulated sugar, lukewarm milk, and dried yeast in a bowl. Leave the mixture to stand briefly.

  2. 2

Add the melted butter, egg, and vanilla extract. Work the mixture into a smooth, non-sticky dough.

  3. 3

Leave the dough to rise for at least 1 hour.

  4. 4

Near the end of the rising time, prepare the filling by mixing the softened butter, brown sugar, and cinnamon into a smooth, easily spreadable paste.

  5. 5

Once the dough has risen, roll it out and spread the cinnamon filling evenly over the entire surface.

  6. 6

Cut the filled dough into 3 equally sized sections and stack the sections on top of one another.

  7. 7

Cut the stacked dough into several equally sized pieces.

  8. 8

Transfer the pieces to a baking pan, arranging them one behind another as shown in the source video.

  9. 9

Leave the assembled dough to rise for at least 30 minutes.

  10. 10

Brush the risen loaf with the additional egg.

  11. 11

Bake at 175°C for approximately 30–35 minutes.

  12. 12

Toward the end of baking, make the glaze by mixing the powdered sugar with the milk and a little vanilla.

  13. 13

Allow the bread to cool slightly, then spread it with the glaze and serve.

Notes

The source does not specify the pan size or exact shape and number of the final pieces; arrange them in the pan as shown in the video. The bread is intended to be pulled apart piece by piece.
