
Broccoli Crust Pizza (Flourless)

Ingredients
- 1 broccoli (medium, approx. 500g)
- 2 eggs
- 100 g shredded mozzarella or parmesan (for the crust)
- 0.5 linguriță oregano
- 0.5 linguriță garlic powder (optional)
- salt and pepper (to taste)
- 100 g tomato sauce (for topping)
- 150 g mozzarella (for topping)
- mushrooms, peppers, olives, onion, ham (or other favorite toppings)
- basil or oregano (for topping)

Preheat the oven to 200°C and line a baking sheet with parchment paper.

Break the broccoli into florets and boil for 2-4 minutes or steam until slightly softened.

Pulse the cooked broccoli in a food processor until you get a rice-like consistency.

Place the riced broccoli in a clean kitchen towel and squeeze it very well to remove all excess water. This is the most important step for a crispy crust.

In a large bowl, mix the squeezed broccoli with the eggs, 100g of mozzarella (or parmesan), oregano, garlic powder, salt, and pepper.

Transfer the mixture to the prepared baking sheet and spread it with your hands or a spatula into a circle, about 0.5 cm thick.

Bake the crust in the preheated oven for 15-20 minutes until the edges turn golden and the crust is firm to the touch.

Remove the tray from the oven and spread the tomato sauce over the crust.

Add the remaining mozzarella and your favorite toppings (mushrooms, peppers, olives, onion, ham).

Return to the oven for another 5-10 minutes until the cheese is melted and slightly browned.

Sprinkle fresh basil or oregano before serving.
Notes
The secret to a successful crust is squeezing the broccoli extremely well after boiling to remove moisture.
