Ingredients

  • 5 eggs (divided into yolks and whites; use pasteurized if preferred)
  • 40 g sugar (divided; use 30-50g depending on desired sweetness)
  • 175 g high quality chocolate (50-70% cocoa; use 150-200g depending on desired thickness)
  • 125 g butter

    Melt the butter completely in a saucepan over low heat.

    Add the chocolate to the melted butter and let it melt on low heat, stirring occasionally, ensuring it doesn't burn.

    Meanwhile, separate the 5 eggs into two separate bowls.

    Add half of the sugar (about 15-25g) to the bowl with egg whites and the other half to the bowl with egg yolks.

    Using an electric mixer, whisk the egg whites until they form stiff peaks, adding the sugar gradually as you go. This should take around 3-4 minutes.

    Whisk the egg yolks with the sugar in the other bowl for about 3-4 minutes until pale and slightly thickened.

    Gently fold the whipped egg yolks into the whipped egg whites until barely mixed together.

    Add the melted chocolate and butter mixture into the egg mixture.

    Gently fold until the mixture is completely homogeneous.

    Keep the mousse in the mixing bowl or transfer it to a preferred serving dish.

    Let it sit in the fridge to set for at least 4-5 hours, or ideally overnight for the best consistency.

Notes

The thickness of the mousse depends on the amount of chocolate used; more chocolate results in a thicker consistency. For the best flavor, use high-quality chocolate with 50-70% cocoa solids.
