High Protein Baked Pancake Bowl

Ingredients
- 1 egg (large)
- 50 g yoghurt (plain or vanilla)
- 70 ml milk (almond or any milk)
- 35 g all purpose flour
- 25 g vanilla protein powder
- 0.5 tsp baking powder
- 50 g frozen blueberries (or fruit of your choice)
- sugar free maple syrup (optional topping)

Preheat your oven to 180°C (350°F).

In a bowl, combine the egg, 50g of yoghurt, and 70ml of milk. Whisk until well combined.

Add 35g of all purpose flour, 25g of vanilla protein powder, and ½ tsp of baking powder to the wet ingredients.

Mix the batter until smooth and no dry clumps of flour or protein powder remain.

Top the batter with 50g of frozen blueberries or your choice of fruit.

Place the bowl in the oven and bake for 20–25 minutes until the center is set and the edges are lightly golden.

Remove from the oven and finish with an optional drizzle of sugar-free maple syrup.
Notes
