Ingredients
- 4 large eggs
- 4 oz cream cheese (softened)
- 2 tbsp butter (for cooking)
- salt (pinch, optional)
- vanilla extract (optional)

Add the 4 large eggs and 4 oz of softened cream cheese to a blender.

Blend the mixture until it is completely smooth with no lumps.

Let the batter sit for 2–3 minutes to thicken slightly before cooking.

Heat a nonstick skillet or griddle over low–medium heat.

Add a little butter to the pan to coat.

Pour the batter into small rounds; note that they will spread slightly.

Notes
These pancakes are custard-like in texture. For a fluffier version, you can add 1-2 tbsp of protein powder or a pinch of baking powder if not following a strict carnivore diet. Leftovers can be stored in the fridge for up to 3 days and reheated gently in a pan.
