Ingredients

  • 4 large eggs
  • 4 oz cream cheese (softened)
  • 2 tbsp butter (for cooking)
  • salt (pinch, optional)
  • vanilla extract (optional)

Steps

  1. 1

Add the 4 large eggs and 4 oz of softened cream cheese to a blender.

  2. 2

Blend the mixture until it is completely smooth with no lumps.

  3. 3

Let the batter sit for 2–3 minutes to thicken slightly before cooking.

  4. 4

Heat a nonstick skillet or griddle over low–medium heat.

  5. 5

Add a little butter to the pan to coat.

  6. 6

Pour the batter into small rounds; note that they will spread slightly.

  7. 7

Cook for 2–3 minutes per side. Keep the heat lower than usual as these brown quickly.

  8. 8

Flip carefully using a spatula, as these are softer and more delicate than regular flour-based pancakes.

  9. 9

Remove from heat and let the pancakes rest for 1–2 minutes to firm up.

  10. 10

Serve warm with additional butter or your preferred carnivore-friendly topping.

Notes

These pancakes are custard-like in texture. For a fluffier version, you can add 1-2 tbsp of protein powder or a pinch of baking powder if not following a strict carnivore diet. Leftovers can be stored in the fridge for up to 3 days and reheated gently in a pan.
