Ingredients

  • 2 tbsp olive oil
  • 2 zucchini (quartered and sliced into 1/2-inch pieces)
  • salt (to taste; the method specifies a few pinches, then adjusting as needed)
  • black pepper (to taste; the method specifies a few pinches, then adjusting as needed)
  • 2 tbsp butter
  • 0.25 cup gluten-free panko breadcrumbs
  • 0.5 lemon juice (from 1/2 lemon)

Steps

  1. 1

Heat the olive oil in a large stainless-steel pan over medium heat. Wait until the oil is hot.

  2. 2

Add the zucchini and stir it into the hot oil. Season all over with a few pinches of salt and pepper.

  3. 3

Sauté for roughly 5 minutes, until the zucchini is fork-tender but not mushy.

  4. 4

Add the butter to the pan and let it melt.

  5. 5

Stir in the gluten-free panko breadcrumbs. Toast, stirring, for 2–4 minutes until fragrant and golden.

  6. 6

Stir in the lemon juice to coat the zucchini and breadcrumbs, then turn off the heat.

  7. 7

Taste and adjust the seasoning as needed, then serve.

Notes

Yellow squash can replace the zucchini. Avocado oil can replace olive oil; oil can be used instead of butter. White wine vinegar can substitute for lemon juice. Use regular breadcrumbs if gluten-free breadcrumbs are not needed.
