- 2 sweet potatoes (large, peeled and cubed)
- 2 tbsp olive oil (divided)
- 1 lb ground beef (lean (90/10 recommended))
- 2 cup corn kernels (fresh or frozen)
- 0.25 cup mayonnaise
- 0.25 cup Greek yogurt (plain, non-fat)
- 1 tbsp honey
- 0.5 tsp red chili flakes (adjust for heat preference)
- 1 tbsp lime juice (freshly squeezed)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- salt and black pepper (to taste)

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on the prepared baking sheet. Spread them in a single layer and roast for 20-25 minutes, or until tender and slightly browned at the edges.

While the potatoes roast, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through (about 7-10 minutes). Season with garlic powder, smoked paprika, salt, and pepper. Drain any excess fat.

In a separate small skillet or the same skillet (if beef is removed), char the corn kernels over high heat for 3-5 minutes until they develop golden-brown spots.

In a medium bowl, whisk together the mayonnaise, Greek yogurt, honey, red chili flakes, and lime juice to create the hot honey dressing.

Stir the charred corn into the hot honey dressing until well coated.

Assemble the bowls by dividing the roasted sweet potatoes and seasoned ground beef among four bowls. Top each with a generous portion of the hot honey street corn mixture.

Notes
For a lighter version, replace the mayonnaise with more Greek yogurt. If you prefer more heat, add a teaspoon of sriracha or hot sauce to the dressing.
