Ingredients

  • 2 rice paper (circular sheets)
  • 1 egg (beaten, for soaking the rice paper)
  • 2 eggs (scrambled, for the filling)
  • 60 g manchego cheese (sliced or shredded)
  • 2 rebanadas turkey breast or ham (chopped or whole)
  • salt and pepper (to taste)
  • everything bagel seasoning or sesame seeds (for topping)

Steps

    Prepare the filling by cooking the 2 scrambled eggs in a pan with a bit of salt and pepper to taste. Set aside.

    In a shallow dish, beat the remaining egg intended for soaking.

    Dip a sheet of rice paper into the beaten egg on both sides until pliable, and drain off the excess.

    Place the sheet on a clean surface and fill it with a portion of scrambled eggs, turkey breast, and manchego cheese.

    Roll the rice paper tightly, like a burrito, and then join the ends to form a circle with a hole in the middle (bagel shape).

    Sprinkle everything bagel seasoning or sesame seeds on top.

    Repeat the process with the second sheet of rice paper.

    Place the bagels in the air fryer basket.

    Cook at 375°F (190°C) for 8 to 9 minutes, or until the exterior is golden brown and very crispy.

Notes

Make sure not to over-soak the rice paper so it doesn't tear while rolling. Using egg for soaking instead of water gives it a richer texture and helps the seasoning stick better.
