Ingredients
- 400 g extra firm tofu (pressed and sliced into thin strips)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 garlic (minced)
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp smoked paprika
- 0.5 tsp turmeric
- 0.25 tsp cinnamon
- salt (to taste)
- black pepper (to taste)

Press the extra firm tofu to remove excess moisture, then slice it into thin, bite-sized strips or shards to mimic the texture of shaved meat.

In a medium mixing bowl, combine the olive oil, lemon juice, minced garlic, cumin, coriander, smoked paprika, turmeric, cinnamon, salt, and black pepper.

Add the tofu strips to the bowl and toss gently until every piece is thoroughly coated in the marinade. Let it sit for at least 10 minutes for better flavor absorption.

Heat a large non-stick skillet over medium-high heat. Add the tofu strips in a single layer, working in batches if necessary to avoid crowding the pan.

Cook the tofu for 3-5 minutes per side, undisturbed, until the edges are golden brown and crispy.

Remove from heat and serve immediately in a warm pita or over a grain bowl with tahini sauce and fresh vegetables.
Notes
For the best texture, use a tofu press or heavy skillet to press the tofu for 20 minutes before slicing. You can also bake the tofu at 400°F (200°C) for 20-25 minutes if you prefer a hands-off method.
