Ingredients

  • 150 g Greek yogurt (high-protein variety recommended)
  • 1 egg (large)
  • 0.5 tbsp vanilla extract
  • 0.5 tbsp lemon juice
  • 30 g stevia (add more if you prefer it sweeter; note that concentration varies by brand)
  • 15 g cornstarch

Steps

    In a mixing bowl, combine the Greek yogurt, egg, vanilla extract, lemon juice, stevia, and cornstarch.

    Mix all the ingredients thoroughly until the batter is smooth and well combined.

    Line a ramekin with baking paper (parchment paper) and pour the batter into it.

    Place the ramekin in the air fryer. Use the 'bake' setting and cook at 210°C (410°F) for 12–15 minutes, or until the top is nicely burnt and caramelized.

    Remove from the air fryer and let it cool completely at room temperature.

    Refrigerate the cheesecake for at least 2 hours to allow it to set properly before serving.

Notes

Be careful with the amount of stevia used, as different brands have different concentrations; 30g of a highly concentrated stevia may be too much. You can substitute stevia with monk fruit or allulose. Ensure the cheesecake is fully chilled before eating for the best texture.
