Ingredients

  • 125 g Salted butter (Browned)
  • 150 g Dark chocolate (Chopped)
  • 50 g Cocoa powder
  • 1 tsp Instant coffee powder
  • 180 g Caster sugar
  • 45 ml Milk (Warm, not boiling)
  • 1 tbsp Condensed milk
  • 1 tsp Vanilla extract
  • 100 g All-purpose flour
  • Salt (Amount unspecified; listed in method for sifting with the flour)

Steps

  1. 1

Line a 7×7-inch square pan with parchment paper.

  2. 2

Place the salted butter in a saucepan over medium heat. Melt it, then continue cooking, stirring or swirling frequently. It will foam; cook until the milk solids turn deep golden-brown and smell nutty, then immediately remove the pan from the heat.

  3. 3

Pour the browned butter into a bowl. Add the chopped dark chocolate and let it sit for 1–2 minutes, then whisk until completely smooth.

  4. 4

Add the cocoa powder and instant coffee to the warm chocolate-butter mixture. Whisk until smooth and glossy.

  5. 5

In a separate bowl, whisk the warm (not boiling) milk and caster sugar vigorously for 1–2 minutes, until glossy and slightly thickened, with most of the sugar beginning to dissolve.

  6. 6

Slowly pour the hot sugar-and-milk mixture into the warm chocolate mixture while whisking continuously.

  7. 7

Whisk in the condensed milk and vanilla extract until smooth.

  8. 8

Sift the flour and salt into the mixture. Fold gently with a spatula just until the flour disappears; do not overmix.

  9. 9

Transfer the batter to the lined pan and spread it evenly.

  10. 10

Bake at 180°C for approximately 20–22 minutes. The edges should be set while the centre remains slightly soft; a toothpick inserted in the centre should come out with thick, moist crumbs attached.

  11. 11

Let the brownies cool in the pan for at least 2–3 hours before cutting. For an exceptionally fudgy texture, chill them in the refrigerator after they have cooled to room temperature.

Notes

The author notes that the butter should be browned and the sugar must be whisked with warm milk; both points are important. Salt is named in the method but no quantity is provided. The source does not specify a refrigerator chilling time.
