Baked Cheesecake
A rich and creamy baked cheesecake flavored with raspberry and vanilla, featuring a light sponge base and a fresh raspberry sauce.

Ingredients
- 1 23cm sponge base (cut to 5mm thick disc)
- 1 tsp vanilla bean paste
- 1 lemon zest and juice (grated zest and juice of 1 lemon)
- 200 g caster sugar
- 50 g corn flour
- 850 g full-fat soft cream cheese
- 4 large eggs
- 175 ml double cream
- 400 g raspberries (divided: 250g for filling, remainder for sauce and topping)
- chocolate leaves (for serving)
- coloured cocoa bean spray (for serving)

Preheat the oven to 160°C (320°F).

Cut the sponge base to a diameter of 23cm. Slice it in half horizontally to form a 5mm thick disc, and place it in the bottom of a 23cm springform cake tin.

In a large bowl, combine the vanilla bean paste, lemon zest, lemon juice, caster sugar, corn flour, and cream cheese. Whisk together until well combined.

Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated.

Add the double cream and whisk until the mixture is smooth.

Add 250g of the raspberries to the batter and stir carefully through the mixture to avoid breaking them too much.

Pour the mixture into the prepared cake tin and tap it lightly on the counter to settle the mix and remove air bubbles.

Place the cake tin into a roasting tray. Pour hot water into the roasting tray to a depth of 2cm to create a bain marie.

Bake for 1¼ to 1½ hours, until the top is golden and the cheesecake is just set with a slight wobble in the center.

Remove the cheesecake from the oven and allow it to cool completely in the tin.

Once cooled, remove from the tin and place on a serving plate.

Blitz three-quarters of the remaining raspberries to create a sauce.

Top the cheesecake with the remaining whole raspberries and drizzle the raspberry sauce over the top.

Garnish with chocolate leaves and a spray of cocoa butter before serving.
Notes
The bain marie (water bath) is essential for a smooth, crack-free finish. Ensure the springform tin is well-sealed or wrapped in foil if you are concerned about water leaking in.
