
Parmesan Baked Chicken

Ingredients
- 4 oz chicken breasts (5-6 oz. each, seasoned with salt and pepper)
- 0.25 cup grated Parmesan cheese
- 0.25 cup ranch dressing (your favorite brand)
- 0.5 cup Panko bread crumbs
- 1 tsp garlic salt
- 0.333 cup shredded Parmesan cheese
- 2 tbsp butter (melted)
- 1 cup shredded Provolone cheese

Cook the seasoned chicken breasts in a skillet for 10 - 12 minutes, until chicken is nicely browned and thoroughly cooked to an internal temperature of 165° F.

While the chicken is cooking, prepare the ranch spread and Parmesan crumb topping.

For the ranch spread, mix 1/4 cup of grated Parmesan and 1/4 cup ranch dressing in a small bowl. Set aside.

For Parmesan crumb topping, mix bread crumbs, garlic salt, shredded Parmesan and melted butter. The crumbs should be evenly moistened.

Position rack in center of the oven. Preheat broiler.

Transfer cooked chicken to an oven-safe casserole dish.

Spread ranch spread on each breast, top with provolone cheese and sprinkle liberally with Parmesan crumb topping.

Place chicken under broiler and cook until cheese melts and crumb topping turns light brown.

Serve immediately.
