Creamy Pasta with Chicken and Mushrooms

Ingredients
- 200 g Penne pasta (or any short pasta)
- 250 g Chicken breast (cut into bite-sized pieces)
- 150 g Mushrooms (sliced)
- 2 Garlic (cloves, finely minced)
- 200 ml Cooking cream (heavy cream)
- 30 g Parmesan cheese (grated)
- 1 tbsp Olive oil (for sautéing)
- Salt and black pepper (to taste)
- Fresh parsley (chopped, for garnish)

Bring a large pot of salted water to a boil. Add the penne and cook according to the package instructions until al dente.

While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.

Add the chicken pieces to the skillet. Season with salt and pepper, and cook until golden brown and cooked through, approximately 5-7 minutes.

Add the sliced mushrooms to the skillet with the chicken. Sauté for 3-4 minutes until the mushrooms soften and release their juices.

Add the minced garlic and cook for 1 additional minute until fragrant, taking care not to let it burn.

Pour the cooking cream into the skillet. Reduce the heat to medium and let the sauce simmer for 2-3 minutes to thicken slightly.

Add the grated Parmesan cheese to the sauce and stir until melted and the sauce is smooth.

Drain the pasta and add it directly to the skillet with the creamy sauce. Toss well to coat all the pasta.

Serve immediately, garnished with chopped fresh parsley and more black pepper if desired.
Notes
If the sauce is too thick, add a little of the pasta cooking water to thin it out.
