Ingredients

  • 500 g pork ribs (cut into small bite-sized pieces)
  • 3 garlic (cloves, minced)
  • 1 inch ginger (minced)
  • 1 tbsp fermented black beans (rinsed and lightly mashed)
  • 1 tbsp light soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp oyster sauce
  • 0.5 tsp sugar
  • 0.25 tsp white pepper
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 red chili (sliced, for garnish)
  • 1 scallions (sliced, for garnish)

Steps

    Rinse the pork rib pieces under cold water and pat them thoroughly dry with paper towels to ensure the marinade sticks properly.

    In a large mixing bowl, combine the pork ribs with minced garlic, minced ginger, and the fermented black beans.

    Add the light soy sauce, Shaoxing wine, oyster sauce, sugar, and white pepper to the bowl. Mix well to coat each piece of rib.

    Add the cornstarch and vegetable oil to the ribs. Toss again until the ribs are evenly coated in a velvety layer.

    Transfer the ribs to a heatproof steaming plate, spreading them out into a single layer for even cooking.

    Prepare a steamer by bringing water to a vigorous boil.

    Place the plate of ribs into the steamer, cover, and steam over high heat for 12 to 15 minutes, or until the pork is cooked through and tender.

    Carefully remove the plate from the steamer and garnish with sliced red chilies and scallions before serving.

Notes

For the best texture, ensure the ribs are patted very dry before adding the cornstarch. You can marinate the ribs for 30 minutes in the fridge for deeper flavor penetration.
