  • 1 cup All-purpose flour (Plus additional flour for dredging)
  • 4 oz Mozzarella cheese (Cut into thick pieces matching the hot dogs)
  • 4 Hot dogs (Use standard-size hot dogs; cut or leave whole to match the mozzarella pieces)
  • 4 Wooden skewers or sticks (Soak wooden skewers briefly if needed for frying)
  • 1 Egg (Beaten for the egg wash)
  • 1 cup Panko breadcrumbs (For coating)
  • Neutral frying oil (Enough for a deep pot or deep fryer; oil for frying is not fully consumed)

    Peel the potatoes and cut them into evenly sized chunks so they cook at the same rate.

    Place the potatoes in a pot of salted boiling water. Cook until completely tender throughout and easily pierced with a fork, about 12–15 minutes.

    Drain the potatoes thoroughly, return them to the warm pot, and mash until smooth. Allow excess steam to escape for a minute or two so the dough will not become watery.

    Add salt to taste and the flour. Knead or mix until a soft, cohesive dough forms. If the dough is very sticky, work in a small amount of additional flour; avoid adding so much that it becomes stiff.
