Ingredients

  • 1 lb ground beef (Prefer beef with about 15–20% fat for juicy kababs.)
  • 1 yellow onion (Finely grated or minced; squeeze out excess liquid.)
  • 3 cloves garlic (Finely minced.)
  • 0.25 cup fresh cilantro (Finely chopped.)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 1 tsp salt (Adjust to taste.)
  • 1 tbsp vegetable oil (For brushing the grill or pan.)
  • 1 lemon (Cut into wedges for serving.)

Steps

    Place the ground beef in a large bowl. Add the grated onion, minced garlic, chopped cilantro, cumin, coriander, paprika, black pepper, and salt.

    Mix and knead the beef mixture with clean hands for 3–5 minutes, until the seasonings are evenly distributed and the mixture becomes sticky enough to hold together.

    Cover the bowl and refrigerate the mixture for at least 20 minutes. This firms the meat and makes shaping easier.

    If using wooden skewers, soak them in water while the meat chills. Prepare a charcoal grill or preheat a grill pan over medium-high heat, about 400–450°F (205–230°C), then lightly oil the cooking surface.

    Divide the chilled mixture into 8 portions. With damp hands, shape each portion into a long, even kabab around a skewer, or form it into oval kebabs if cooking without skewers. Press firmly so there are no cracks or air pockets.

    Place the kababs on the hot, oiled grill. Cook for about 4–5 minutes on the first side, without moving them unnecessarily, until browned and the meat releases easily from the grate.

    Turn the kababs and grill for another 8–10 minutes, rotating occasionally so all sides brown evenly. Cook until the center reaches 160°F (71°C) and the juices run clear.

    Transfer the kababs to a plate and rest for 3–5 minutes. Serve hot with lemon wedges and accompaniments such as flatbread, salad, rice, or yogurt sauce.
