Ingredients

  • 1 lb Shrimp (peeled, deveined, and tails removed)
  • 2 tbsp Olive Oil (divided for shrimp and cooking)
  • 1 tsp Chili Powder
  • 0.5 tsp Cumin
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Onion Powder
  • 0.5 tsp Smoked Paprika
  • Salt (to taste)
  • Black Pepper (to taste)
  • 2 cup Shredded Cabbage (green or red, or a mix)
  • 0.25 cup Mayonnaise (for the slaw)
  • 2 tbsp Lime Juice (freshly squeezed)
  • 0.25 cup Fresh Cilantro (chopped)
  • 0.5 cup Sour Cream (for the crema)
  • 1 tbsp Chipotle Peppers in Adobo (finely minced, or use the sauce)
  • 8 Corn Tortillas (small street taco size)
  • 1 Avocado (sliced for garnish)

Steps

    In a medium bowl, combine the shrimp with 1 tablespoon of olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well to ensure every shrimp is evenly coated in the spice mixture.

    Prepare the slaw by mixing the shredded cabbage, mayonnaise, 1 tablespoon of lime juice, and chopped cilantro in a separate bowl. Stir until the cabbage is well-coated and set aside to let the flavors meld.

    Prepare the chipotle crema by whisking together the sour cream, minced chipotle peppers (or adobo sauce), and the remaining tablespoon of lime juice until smooth.

    Heat the remaining tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.

    Add the shrimp to the hot skillet in a single layer. Cook for 2-3 minutes per side, or until the shrimp are pink, opaque, and have a nice sear on the outside. Do not overcook.

    While the shrimp are cooking, warm the corn tortillas in a dry skillet or directly over a gas flame until soft and slightly charred.

    To assemble, place a generous scoop of the lime slaw onto each warm tortilla.

    Top the slaw with 3-4 pieces of cooked shrimp.

    Garnish with avocado slices and a generous drizzle of the chipotle crema. Serve immediately with extra lime wedges if desired.

Notes

For extra heat, add more chipotle sauce to the crema. If you prefer a lighter slaw, you can substitute half of the mayonnaise with Greek yogurt.
