Mexican Picadillo Recipe
This easy Mexican picadillo recipe is made with ground beef, potatoes and plenty of seasonings, great over rice or served with tortillas for a full meal. Big on flavor!

Ingredients
- 1 tbsp olive oil
- 8 oz yellow potatoes (about 3-4 small, diced)
- 1 yellow onion (medium, chopped)
- 1 jalapeno pepper (chopped)
- 1 serrano pepper (chopped (optional, for spicier))
- 2 cloves garlic (chopped)
- 1 lb ground beef (you can use other ground meats, like chicken, turkey or pork)
- 2 tomatoes (large, chopped)
- 0.75 cup beef stock (or use chicken or vegetable stock)
- 1 tbsp paprika
- 1 tbsp Mexican oregano
- 1 tsp cumin
- salt and pepper (to taste)
- cooked rice or warmed tortillas (for serving)
- sliced peppers, chili flakes, fresh lime juice, hot sauce (for serving)

Heat the olive oil in a large pan over medium heat.

Add the diced potatoes, chopped onion, and chopped peppers (jalapeno and optional serrano) to the pan.

Cook the vegetables down for 5 minutes to soften.

Stir in the chopped garlic and the ground beef.

Break up the ground beef with a wooden spoon and brown it for 5 minutes. The meat does not need to be cooked all the way through at this stage.

Stir in the chopped tomatoes, beef stock, paprika, Mexican oregano, cumin, and salt and pepper to taste.

Bring the mixture to a boil over high heat, then reduce the heat to a simmer.

Simmer for 20 minutes, stirring occasionally, to cook the meat through and allow the potatoes to soften completely. Check for doneness at 15 minutes.

Adjust seasonings with additional salt and pepper if needed.

Serve the picadillo over cooked rice or with warmed tortillas, garnished with extra sliced peppers, spicy chili flakes, fresh lime juice, and your favorite hot sauce.
Notes
Variations: Swap the potatoes for other root vegetables like rutabaga, yellow beets, or sweet potatoes. You can also add ancho peppers for a different flavor profile. Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for 3 months or longer.
