Ingredients
- 8 guajillo chilies (toasted and hydrated)
- 5 chiles de árbol (toasted and hydrated; optional for heat)
- 2 garlic cloves (divided; 1 crushed for the chicken, 1 for the sauce)
- 5 whole black peppercorns (divided; 3 crushed for the chicken, 2 for the sauce)
- 2 whole cloves (divided; 1 crushed for the chicken, 1 for the sauce)
- 2 lb chicken pieces (estimated quantity; bone-in pieces like thighs or drumsticks work best)
- 1 tbsp lard (for browning the chicken)
- 1 tsp chicken bouillon powder (Knorr chicken flavor)
- 0.25 tsp cumin seeds (a pinch for the sauce)
- 2 bay leaves (bay leaves)

Toast 8 guajillo chilies and 5 chiles de árbol on a comal or dry skillet over medium heat until fragrant, being careful not to burn them.

Place the toasted chilies in a pot of water and bring to a boil; simmer for a few minutes until they are soft and hydrated.

In a mortar and pestle, crush one clove of garlic, 3 black peppercorns, and 1 clove into a paste.

Apply the crushed spice paste to the chicken pieces to season them.

Heat a tablespoon of lard in a large clay pot (cazuela) or heavy-bottomed pan. Add the chicken pieces and sear, turning occasionally, until they are lightly browned and golden.

In a blender, combine the hydrated chilies, 1 teaspoon of chicken bouillon, 1 clove of garlic, 2 black peppercorns, 1 clove, and a pinch of cumin. Blend until smooth.

Pour the blended chili sauce into the pot with the browned chicken.

Add the bay leaves to the pan and stir to combine the sauce with the chicken.

Cover the pan and let the mixture simmer for 15 to 20 minutes until the chicken is fully cooked and the sauce has thickened slightly.

Notes
