Caramel Apple Cookie Pizza

Ingredients
- 0.667 package Sugar cookie dough (Approximately two-thirds of a store-bought Pillsbury sugar cookie dough package; enough to cover the bottom of a 9-inch cake pan.)
- Baking spray (For coating the 9-inch cake pan.)
- 1 cup Chocolate (Melted; reserve any extra for optional drizzling.)
- 20 Caramel squares (Unwrapped and melted with water to make a smooth caramel sauce.)
- 2 tbsp Water (For melting the caramel squares into sauce.)
- 2 Apples (Chopped; the author used one Honeycrisp and one Granny Smith. Chop just before assembling to limit browning.)

Preheat the oven to 325°F (165°C). Lightly coat a 9-inch cake pan with baking spray.

Press the sugar cookie dough evenly into the bottom of the prepared cake pan, creating one uniform layer.

Bake for approximately 17 minutes, until the edges are golden brown and the center is set.

Remove the cookie crust from the pan and let it cool completely before adding the toppings.

While the cookie cools, unwrap the caramel squares and place them in a saucepan with 2 tablespoons of water. Melt over low to medium heat, stirring constantly, until completely smooth. Set aside briefly.

Melt the chocolate until smooth, using a microwave in short intervals or a double boiler. Stir until no lumps remain.

Chop the apples immediately before assembling the pizza so they have less time to brown.

Spread the melted chocolate in an even layer over the completely cooled cookie crust.

Spread a layer of the smooth caramel sauce over the chocolate.

Scatter the chopped apples over the caramel layer, using as many or as few as desired.

Optionally drizzle any remaining melted chocolate and/or caramel sauce over the apples.

Notes
The apples begin to brown after chopping, so wait until the cookie crust and toppings are ready before cutting them. The author recommends serving immediately.
