Ingredients
- 2 Green onions (Whites and greens separated)
- 2 Bok choy (Small heads or equivalent, for blanching)
- 4 oz Fresh wonton noodles (Thin variety)
- 1 tbsp Sesame oil (For sautéing)
- 2 clove Garlic (Grated)
- 1 tsp Ginger (Grated)
- 2 cup Chicken bone broth
- 1 tbsp Soy sauce (To taste)
- 1 tsp Shaoxing wine (Transcribed as jiao sheng wine)
- 0.5 tsp Chicken bouillon powder
- 0.5 tsp Sugar
- White pepper (To taste)
- Salt (To taste)
- 1 pinch MSG
- 6 Wontons or Soup Dumplings (Frozen or fresh)
Steps
- 1
Prepare the green onions by separating the white parts from the green parts. Slice both and set aside.
- 2
Bring a pot of water to a boil. Quickly blanch the bok choy in the boiling water, then immediately transfer it to an ice bath to stop the cooking process.
- 3
In the same boiling water, drop in the fresh wonton noodles. Cook for about 45 seconds until tender, then drain the pot and set the noodles aside.
- 4
In the empty pot, add a little bit of sesame oil and heat over medium heat.
- 5
Add the grated garlic, grated ginger, and the white parts of the green onions to the pot. Sauté until fragrant.
- 6
Pour in the chicken bone broth.
- 7
Season the broth with soy sauce, Shaoxing wine, chicken bouillon powder, sugar, white pepper, salt, and a pinch of MSG.
- 8
Bring the broth up to a simmer.
- 9
Add the wontons (or soup dumplings) to the simmering broth. Cook until the dumplings are floating and heated through.
- 10
To serve, place the cooked noodles and blanched bok choy in a bowl, pour the broth and dumplings over them, and garnish with the green parts of the green onions.
Notes
The author notes that soup dumplings can be used as a substitute if you run out of wontons. The 'jiao sheng wine' mentioned in the transcript is a phonetic transcription of Shaoxing wine.
