Ingredients

  • 0.5 cup potato (peeled and diced into small cubes)
  • 1 tbsp olive oil (for frying)
  • salt (to taste)
  • black pepper (to taste)
  • 1 slice bread (thick-cut, such as brioche or sourdough)
  • 1 tsp butter (for toasting bread)
  • 2 tbsp shredded cheese (such as cheddar or mozzarella)
  • 1 egg (large)
  • parsley (fresh, chopped for garnish)

Steps

  1. 1

Peel and dice the potato into small, uniform cubes to ensure even and quick cooking.

  2. 2

Heat olive oil in a small non-stick skillet over medium heat.

  3. 3

Add the potato cubes to the skillet and season with salt and black pepper.

  4. 4

Sauté the potatoes, stirring occasionally, until they are golden brown and crispy on the outside and tender on the inside, about 5-7 minutes.

  5. 5

While the potatoes cook, toast the slice of bread in a separate pan with a little butter until golden on both sides.

  6. 6

Once the potatoes are cooked, push them into a circular pile in the center of the skillet.

  7. 7

Sprinkle the shredded cheese over the potato pile and allow it to begin melting.

  8. 8

Crack the egg directly on top of the cheesy potato pile.

  9. 9

Cover the skillet with a lid and cook for 2-3 minutes, or until the egg white is set but the yolk is still runny.

  10. 10

Carefully slide the potato and egg stack onto the toasted bread.

  11. 11

Garnish with fresh chopped parsley and additional black pepper if desired.

Notes

For extra flavor, you can add a pinch of paprika or garlic powder to the potatoes while frying. Ensure the potato cubes are small (about 1/4 inch) so they cook through by the time they are browned.
