A lighter shrimp scampi made with olive oil replacing half of the traditional butter. Tender shrimp are tossed with spaghetti in a bright lemon, garlic, parsley, and optional brandy sauce.

Ingredients

  • 8 oz uncooked spaghetti
  • 3 tbsp olive oil (Divided: 1 tablespoon for cooking the shrimp and 2 tablespoons for the sauce.)
  • 2 lb large shrimp (Uncooked, peeled and deveined.)
  • 1 tbsp garlic (Minced.)
  • 0.25 cup shallots or green onions (Chopped.)
  • 2 tbsp lemon juice
  • 0.25 cup parsley (Chopped.)
  • 0.25 tsp salt
  • ground black pepper (To taste.)
  • 2 tbsp brandy or sherry (Optional.)
  • 2 tbsp butter

Steps

    Fill a large pot about three-quarters full with water and bring it to a full boil.

    Add the spaghetti to the boiling water and cook according to the package directions, until tender but still slightly firm. Drain the pasta thoroughly.

    While the pasta cooks, heat 1 tablespoon of the olive oil in a large saucepan over medium heat.

    Add the shrimp to the saucepan in an even layer. Cook for 2 to 3 minutes on each side, until opaque and cooked through. Transfer the shrimp to a bowl and keep warm.

    Add the minced garlic and chopped shallots or green onions to the same saucepan. Cook until fragrant, about 10 seconds, taking care not to brown the garlic.

    Add the lemon juice, parsley, salt, and ground black pepper. Add the brandy or sherry if using, and stir briefly to combine.

    Remove the saucepan from the heat. Add the cooked shrimp, the remaining 2 tablespoons of olive oil, and the butter.

    Toss the shrimp thoroughly until the butter melts and the shrimp are evenly coated in the lemon-garlic sauce.

    Divide the drained pasta among warmed individual bowls. Top each serving with shrimp and sauce, and serve immediately.

Notes
