Ingredients
- 1 pack chicken thighs (boneless skinless preferred for meal prep; approximately 2-3 lbs)
- 2 tbsp olive oil (to coat the chicken)
- salt (season heavily)
- black pepper (season heavily)
- 1 onion (sliced)
- 1 tbsp Italian seasoning
- 3 clove garlic (minced or crushed)
- 0.5 cup balsamic vinaigrette
- 2 can stewed tomatoes (approximately 14.5 oz each)

Place the pack of chicken thighs into the bottom of a crock pot.

Drizzle the chicken with olive oil.

Season the chicken heavily with salt and pepper.

Add the sliced onion, Italian seasoning, and garlic to the pot.
