Ingredients

- 0.75 cup light brown sugar
- 0.25 cup sugar
- 2 eggs (room temperature)
- 1.5 tsp vanilla extract
- 2 cup flour
- 3 oz cheesecake flavored pudding mix (1 package)
- 1 tsp baking soda
- 0.25 tsp salt
- 1.5 cup white chocolate chips
- 1 cup freeze dried raspberries (crushed)

In a stand mixer or large bowl, cream together 1 cup of softened butter, 3/4 cup light brown sugar, and 1/4 cup granulated sugar until light and fluffy.

Add 2 room-temperature eggs and 1 1/2 tsp vanilla extract to the butter mixture and mix until well combined.

In a separate bowl, combine the dry ingredients: 2 cups flour, one 3 oz package of cheesecake flavored pudding mix, 1 tsp baking soda, and 1/4 tsp salt.

Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined.

Gently fold in 1 1/2 cups white chocolate chips and 1 cup of crushed freeze-dried raspberries.

Chill the cookie dough in the refrigerator for 1 hour.

Notes
You can substitute the raspberries for freeze-dried strawberries or mixed berries to create different cheesecake cookie variations.
