  • 300 g Potatoes (diced)
  • 0.5 Red onion (diced)
  • 1 Large tomato (diced)
  • Pickles (diced, to taste)
  • 45 g Low-fat shredded cheese
  • 1 cabeza Lettuce (chopped)
  • 125 g Low-fat Greek yogurt (for the dressing)
  • 1 tbsp Light mayonnaise (or fat-free)
  • 2 tbsp Yellow mustard
  • 1.5 tbsp Low-calorie ketchup
  • 2 tbsp Pickle juice
  • 2 tsp Sweetener (sugar substitute)
  • Diced pickles (extra for the dressing)
  • Diced onion (extra for the dressing)
  • Cooking spray (for cooking)
  • Salt, pepper, garlic powder, and onion powder (to taste for seasoning)

Steps

  1. 1

Heat a skillet over medium-high heat and spray with cooking spray.

  2. 2

Cook the extra lean ground beef in the skillet until it develops a nice brown color.

  3. 3

Season the meat with seasonings of your choice; the author suggests salt, pepper, garlic powder, and onion powder.

  4. 4

For the dressing, add 125g Greek yogurt, 1 tbsp light mayonnaise, 2 tbsp mustard, 1.5 tbsp low-calorie ketchup, 2 tbsp pickle juice, 2 tsp sweetener, diced pickles, and diced onion to a small bowl.

  5. 5

Mix the dressing ingredients well until fully combined.

  6. 6

Dice 300g of potatoes and season them with salt and garlic powder.

  7. 7

Cook the potatoes in an air fryer or oven at 400°F (200°C) for 13 to 18 minutes, depending on the size of the cubes, until golden brown.

  8. 8

In a large salad bowl, combine the chopped lettuce, tomato, red onion, pickles, shredded cheese, cooked potatoes, and prepared meat.

  9. 9

Pour the dressing over the mixture and toss well to incorporate all the flavors.

  10. 10

Divide the salad into 2 equal portions and serve immediately.
