Honey-Lime Cilantro Chicken & Rice Bowls

- 1.5 lb Chicken breast (cut into bite-sized pieces)
- 3 tbsp Honey
- 2 tbsp Lime juice (freshly squeezed)
- 0.25 cup Cilantro (freshly chopped)
- 2 tbsp Olive oil (for cooking)
- 3 Garlic (cloves, minced)
- 1 tbsp Soy sauce
- 2 cup White rice (cooked)
- Salt and pepper (to taste)

Prepare the marinade by whisking together the honey, lime juice, minced garlic, soy sauce, and half of the chopped cilantro in a small bowl.

Place the bite-sized chicken pieces in a bowl or resealable bag and pour the marinade over them. Let marinate for at least 15-30 minutes if time permits.

Heat olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet, discarding excess marinade. Season with salt and pepper.

Sauté the chicken for 6-8 minutes, stirring occasionally, until the chicken is cooked through and the edges are golden brown and slightly caramelized from the honey.
