Ingredients

  • 1.5 lb Chicken breast (cut into bite-sized pieces)
  • 3 tbsp Honey
  • 2 tbsp Lime juice (freshly squeezed)
  • 0.25 cup Cilantro (freshly chopped)
  • 2 tbsp Olive oil (for cooking)
  • 3 Garlic (cloves, minced)
  • 1 tbsp Soy sauce
  • 2 cup White rice (cooked)
  • Salt and pepper (to taste)

Steps

  1. 1

Prepare the marinade by whisking together the honey, lime juice, minced garlic, soy sauce, and half of the chopped cilantro in a small bowl.

  2. 2

Place the bite-sized chicken pieces in a bowl or resealable bag and pour the marinade over them. Let marinate for at least 15-30 minutes if time permits.

  3. 3

Heat olive oil in a large skillet over medium-high heat.

  4. 4

Add the chicken to the skillet, discarding excess marinade. Season with salt and pepper.

  5. 5

Sauté the chicken for 6-8 minutes, stirring occasionally, until the chicken is cooked through and the edges are golden brown and slightly caramelized from the honey.

  6. 6

Divide the cooked white rice into four bowls.

  7. 7

Top the rice with the cooked honey-lime chicken.

  8. 8

Garnish with the remaining fresh cilantro and an extra squeeze of lime if desired.
