- 60 ml olive oil (Plus more for finishing, if desired)
- 4 cloves garlic (Thinly sliced or finely minced)

Bring a large pot of generously salted water to a rolling boil. Add the spaghetti and cook according to the package directions until al dente, with a slight firmness at the center.

Before draining, scoop out about 120 ml (1/2 cup) of the starchy pasta water. Drain the spaghetti without rinsing.

While the pasta cooks, pour the olive oil into a large skillet and warm it over medium-low heat. Add the garlic and cook gently for about 2–3 minutes, stirring often, until fragrant and lightly golden. Do not let the garlic turn dark brown, or it will taste bitter.

Add the smoked paprika and red pepper flakes to the skillet. Stir for about 20–30 seconds until the spices are fragrant and the oil takes on a warm golden-red color.

Add the drained spaghetti to the skillet. Toss thoroughly so every strand is coated with the garlic-infused oil.

Add the reserved pasta water a little at a time while tossing until the oil and starch form a glossy coating that clings to the spaghetti. Continue tossing for 1–2 minutes over low heat.

Taste and adjust the salt and chili seasoning. Stir in the lemon juice, if using, for brightness.

Divide the spaghetti between bowls. Finish with chopped parsley and, if desired, a small drizzle of olive oil. Serve immediately while hot.
