  • 0.5 Lemon juice
  • 150 g Curd
  • 2 Green chili
  • 2 tsp Ginger garlic paste
  • 2 Fried onions
  • 4.5 tbsp Oil
  • 1 tbsp Ghee
  • 0.5 cup Water
  • 7 Almonds
  • 5 Cashews
  • 1 tbsp Coriander seeds
  • 1 tsp Cumin seeds
  • 2 Cardamom
  • 1 Star anise
  • 1 tsp Fennel seeds
  • 2 Dry red chili
  • Coriander leaves
  • Salt

    Prepare the Special Masala: In a small pan, dry roast the almonds, cashews, coriander seeds, cumin seeds, cardamom, star anise, fennel seeds, and dry red chili until fragrant. Allow them to cool, then grind into a fine powder.

    Marinate the chicken: In a large mixing bowl, combine the half kg of chicken with the lemon juice, 150g curd, chopped green chilies, 2 tsp ginger garlic paste, and the prepared special masala powder. Add salt to taste and the fried onions. Mix thoroughly to ensure the chicken is well coated.

    Heat the oil and ghee: In a heavy-bottomed pan or kadhai, heat 4-5 tablespoons of oil and 1 tablespoon of ghee over medium heat.

    Cook the chicken: Add the marinated chicken to the hot pan. Sauté and roast the chicken on medium-high heat for 2-3 minutes, stirring frequently to sear the meat.

    Simmer: Pour in half a cup of water, stir well, and cover the pan with a lid. Reduce the heat to low and let it cook until the chicken is tender and the oil separates from the masala (about 15-20 minutes).

    Finish and Garnish: Once the chicken is cooked through and the gravy has reached your desired consistency, garnish with fresh coriander leaves. Serve hot.

Notes

The recipe uses 'fried onions' (birista). You can prepare these by thinly slicing onions and deep-frying them until golden brown and crispy before starting the recipe.
