- 8 oz arugula or baby spinach
- Parmigiano Reggiano (shaved, for garnish)

In a large serving bowl, combine the extra virgin olive oil, reserved artichoke oil, dijon mustard, lemon juice, lemon zest, grated Parmigiano Reggiano (or Pecorino Romano), and kosher salt.
