Crispy Smashed Potatoes with Garlic and Herbs

Ingredients
- 1.5 lb Baby Yukon Gold potatoes (or other small waxy potatoes)
- Salt (for boiling water and seasoning)
- 3 tbsp Extra virgin olive oil (divided)
- 3 Garlic cloves (minced)
- 1 tbsp Fresh rosemary (finely chopped)
- 1 tsp Fresh thyme (leaves only)
- Black pepper (to taste)

Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly grease with oil.

Place the potatoes in a large pot and cover with cold water by at least an inch. Add a generous pinch of salt.

Bring the water to a boil over high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until they are easily pierced with a fork but not falling apart.

Drain the potatoes and let them sit in the colander for 2-3 minutes to allow excess moisture to steam off.

Arrange the potatoes on the prepared baking sheet. Using the bottom of a heavy glass, a potato masher, or a measuring cup, gently press down on each potato to flatten it until it is about 1/2-inch thick.

Drizzle the smashed potatoes with 2 tablespoons of olive oil and season generously with salt and black pepper.

Roast in the oven for 20-25 minutes.

While the potatoes roast, combine the remaining 1 tablespoon of olive oil, minced garlic, rosemary, and thyme in a small bowl.

Remove the baking sheet from the oven. Carefully flip each potato using a spatula.

Brush or drizzle the garlic-herb oil mixture over the potatoes.

Return the potatoes to the oven and roast for another 10-15 minutes, or until the edges are deep golden brown and very crispy.

Serve immediately while hot and crispy.
Notes
For extra crispiness, ensure the potatoes are as dry as possible before smashing. You can also add a sprinkle of Parmesan cheese during the last 5 minutes of roasting for a savory twist.
