Notes
Leftover onions can be stored in the refrigerator for up to two weeks. They will continue to soften and turn a more uniform pink color the longer they sit. If you do not have a microwave, you can warm the vinegar, sugar, and salt in a small saucepan over medium heat until dissolved. You can also substitute white or yellow onions, though they will not turn pink.
