Ingredients
- 1 tbsp Avocado or olive oil (for sautéing)
- 0.5 Red bell pepper (diced)
- 0.5 Yellow onion (diced)
- 2.5 Garlic cloves (minced; 2-3 cloves)
- 1 tsp Paprika
- 0.5 tsp Cumin
- 0.5 tsp Coriander
- 0.5 tsp Chili powder
- Oregano (pinch)
- Salt & pepper (to taste)
- 1 cup Tomatoes (mix of fresh and fire roasted canned)
- 2.5 Eggs (2-3 eggs)
- Fresh parsley (for garnish)
- Mint (for garnish)
- Greek yogurt (optional topping)
- Chili oil or red pepper flakes (optional topping)
Steps
- 1
Heat a skillet over medium heat and add avocado or olive oil.
- 2
Toss in the diced yellow onion and red bell pepper. Sauté until they are lightly cooked and starting to soften.
- 3
Add the minced garlic, paprika, cumin, coriander, chili powder, oregano, salt, and pepper. Cook for about 1 minute until the spices are fragrant.
- 4
Add the cup of mixed tomatoes to the pan. If using whole canned or large fresh pieces, let them steam briefly, then mash them with a fork to create a chunky sauce.
- 5
Create 2-3 small divots in the tomato mixture using a spoon.
- 6
Crack the eggs into the divots. Reduce the heat to low.
- 7
Cover the pan and let the eggs steam on low heat until the whites are set but the yolks are still to your preferred level of doneness.
- 8
Garnish with fresh parsley and mint. Top with a dollop of Greek yogurt and chili oil if desired.
- 9
Serve immediately with warm pita, crusty bread, or a side salad.
Notes
Optional protein boosts: Add chicken sausage, ground turkey, white beans, or chickpeas when sautéing the vegetables. Suggested sides: Cucumber salad, roasted veggies, or warm pita.
