Ingredients

- 1 shallot (diced)
- 1.5 cup cherry tomatoes
- 0.5 cup roasted red peppers
- 1 tbsp tomato paste
- 1 tsp salt
- 2 tsp italian seasoning
- 0.5 tsp garlic powder
- 0.5 tsp red pepper flakes (optional)
- 0.75 cup heavy cream (can swap for plant-based cream)
- 0.5 cup parmesan cheese (plus more for serving)
- 1.5 cup spinach (chopped; can swap for kale)
- 2 cup cheese tortellini (cooked)

Heat 1 tablespoon of olive oil in a large skillet over medium-low heat.

Add the diced shallot and sauté for 1-2 minutes until softened.

Toss in the cherry tomatoes and cook for 8-10 minutes, or until they have softened and begun to burst.

Notes
