Ingredients

  • 2 large ripe bananas (Peeled; use 2 large or 3 small bananas.)
  • 4 eggs
  • 2 tbsp avocado oil or olive oil (Also use a small amount to grease the pan if necessary.)
  • 1 tsp salt
  • 1 tsp baking powder

Steps

  1. 1

Preheat the oven to 360 °F (180 °C). Grease a loaf pan with a thin layer of oil to make unmolding easier.

  2. 2

Peel the ripe bananas and cut them into pieces to make blending easier.

  3. 3

Place the bananas, eggs, avocado or olive oil, salt, and baking powder in a blender.

  4. 4

Blend until completely smooth, with no large pieces of banana remaining. Scrape down the sides of the blender if necessary.

  5. 5

Pour the mixture into the greased pan and gently tap it against the countertop to release large air bubbles.

  6. 6

Bake at 360 °F (180 °C) for 5 to 8 minutes; this first stage helps the bread rise.

  7. 7

Without removing the pan from the oven, lower the temperature to 325 °F (165 °C) and continue baking for approximately 40 to 45 minutes.

  8. 8

Check for doneness by inserting a knife or toothpick into the center. It should come out clean or with a few moist crumbs, but no liquid batter clinging to it.

  9. 9

Remove the bread from the oven and let it cool before unmolding. Run a knife around the edges if needed, and serve in slices.

Notes

The author recommends letting the bread cool before unmolding; unmolding it while hot may cause it to break apart. The recipe is presented as a sweet, flourless bread.
