Ripe Banana Bread
Sweet, soft, flourless bread made by blending ripe bananas with eggs, oil, salt, and baking powder. It is baked first at a high temperature to help it rise, then at a lower temperature until firm and cooked through.

Ingredients
- 2 large ripe bananas (Peeled; use 2 large or 3 small bananas.)
- 4 eggs
- 2 tbsp avocado oil or olive oil (Also use a small amount to grease the pan if necessary.)
- 1 tsp salt
- 1 tsp baking powder

Preheat the oven to 360 °F (180 °C). Grease a loaf pan with a thin layer of oil to make unmolding easier.

Peel the ripe bananas and cut them into pieces to make blending easier.

Place the bananas, eggs, avocado or olive oil, salt, and baking powder in a blender.

Blend until completely smooth, with no large pieces of banana remaining. Scrape down the sides of the blender if necessary.

Pour the mixture into the greased pan and gently tap it against the countertop to release large air bubbles.

Bake at 360 °F (180 °C) for 5 to 8 minutes; this first stage helps the bread rise.

Without removing the pan from the oven, lower the temperature to 325 °F (165 °C) and continue baking for approximately 40 to 45 minutes.

Check for doneness by inserting a knife or toothpick into the center. It should come out clean or with a few moist crumbs, but no liquid batter clinging to it.

Remove the bread from the oven and let it cool before unmolding. Run a knife around the edges if needed, and serve in slices.
Notes
