Ingredients

  • 2 cup rolled oats (or quick oats; use certified gluten-free as needed)
  • 1 cup non-dairy milk (almond milk used in source)
  • 0.25 cup maple syrup
  • 0.25 cup unsweetened applesauce
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt
  • 0.333 cup dairy-free chocolate chips (or 1/2 cup fresh or frozen berries, plus more for topping)

    Preheat your oven to 375°F (190°C). Grease an 8x8 baking dish or individual ramekins.

    For the Blended Option: To a high-speed blender, add the rolled oats, milk, maple syrup, apple sauce, baking powder, vanilla extract, ground cinnamon, and salt. Blend until smooth.

    For the Whole Option: In a large mixing bowl, combine rolled oats, baking powder, ground cinnamon, and salt. Mix well.

    Add non-dairy milk, maple syrup, applesauce, and vanilla extract to the dry ingredients. Stir until all ingredients are well combined.

    Gently fold in chocolate chips or berries into the oat mixture.

    Pour the mixture into the prepared baking dish or divide it among individual ramekins. Top with additional chocolate chips or berries if desired.

    Bake in the preheated oven for 18-22 minutes for the whole option, or 25-30 minutes for the blended option, or until the top is golden brown and the oats are set. Note: ramekins will need less baking time depending on the size; adjust accordingly.

    Allow the baked oats to cool for a few minutes before serving. This will allow them to set further.

    Customize with additional toppings like a drizzle of nut butter, a dollop of non-dairy yogurt, or extra berries if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For variations: add 1/2 cup peanut butter for Peanut Butter Baked Oats, or 1 tbsp cocoa powder for Chocolate Baked Oats. You can also swap applesauce for pumpkin puree for a seasonal twist.
