Ingredients

  • 1 banana (mashed)
  • 0.75 cup rolled oats (old-fashioned)
  • 0.5 tsp cinnamon
  • 2 tbsp chia seeds
  • 1.25 cup almond milk (unsweetened)
  • 5.3 oz Greek yogurt (reduced-fat (2% recommended))
  • 1 tsp vanilla extract
  • 0.25 cup creamy almond butter (unsweetened; peanut butter works too)

Steps

  1. 1

To a large bowl, add a banana and mash it thoroughly with a fork or masher.

  2. 2

Add old-fashioned rolled oats, chia seeds, and cinnamon powder to the mashed banana.

  3. 3

Add the unsweetened almond milk and vanilla extract.

  4. 4

Add the reduced-fat Greek yogurt and almond butter.

  5. 5

Mix all ingredients together very well until fully combined.

  6. 6

Transfer the overnight oats mixture into 2 cups, mason jars, or bowls.

  7. 7

Cover with a lid and refrigerate for at least two hours (or overnight) to allow the oats and chia seeds to soften and thicken.

Notes

Serving Suggestions: Top with fresh berries, sliced almonds, or other seasonal fruits like peaches, apples, or figs. You can also add walnuts, pecans, pumpkin seeds, or sunflower seeds for extra crunch. Storage: These can be meal prepped several days in advance.
