Peanut Butter Banana Bread

Ingredients
- 3 ripe bananas (Mashed; approximately 350 g edible fruit)
- 1 cup drippy peanut butter (Use a pourable, natural-style peanut butter)
- 2 eggs
- 1 tsp baking powder
- chopped chocolate (Optional; use as much as desired for topping. Nutrition estimated for approximately 60 g semisweet chocolate.)

Preheat the oven to 180°C (350°F). Grease or line a standard loaf tin with parchment paper so the baked loaf can be removed easily.

Place the ripe bananas in a large mixing bowl and mash them thoroughly with a fork until mostly smooth, with only a few small pieces remaining.

Add the drippy peanut butter to the mashed bananas and mix until evenly combined.

Add the eggs and stir until the mixture is smooth and the eggs are fully incorporated.

Add the baking powder and mix just until it is evenly distributed throughout the batter. Do not overmix.

Pour the batter into the prepared loaf tin and smooth the surface with a spatula.

If using, scatter chopped chocolate evenly over the top of the batter.

Bake for 50–55 minutes, until the loaf is set and a skewer inserted into the center comes out mostly clean. Allow it to cool before slicing.
Notes
