Ingredients
- 1.5 cup Medjool dates (pitted and packed; if dry, soak in hot water for 10 minutes then drain)
- 0.5 cup nut butter (such as almond, peanut, or cashew butter; can use seed butter for nut-free)
- 0.33 cup cocoa powder (unsweetened)
- 0.25 tsp sea salt (plus extra for sprinkling)
- 0.5 cup dark chocolate (chips or chopped bar, melted for coating)
Steps
- 1
Place the pitted dates in a high-speed food processor and pulse until they form a thick, sticky paste or a ball.
- 2
Add the nut butter, cocoa powder, and a pinch of salt to the food processor.
- 3
Process the mixture until all ingredients are fully combined and a dough-like consistency forms.
- 4
Scoop about one tablespoon of the mixture at a time and roll between your palms to form smooth balls.
- 5
Melt the dark chocolate in a microwave-safe bowl in 30-second intervals or using a double boiler until smooth.
- 6
Dip each brownie ball into the melted chocolate to coat, then place on a parchment-lined tray.
- 7
Sprinkle a little extra sea salt on top of the wet chocolate if desired.
- 8
Place the tray in the refrigerator for at least 20-30 minutes to allow the chocolate to set before serving.
Notes
Store these bites in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months. If the dates are very dry, soaking them in hot water for 10 minutes before processing is essential for the right texture.
