Rich, buttery Southern pralines packed with pecans and cooked to a classic melt-in-your-mouth candy texture. The mixture is cooked to the soft-ball stage, beaten until it begins to set, and quickly portioned onto a lined baking sheet.

Weights are estimates. Together, the ingredients weigh about 770 g before cooking, which is about 65 g per serving.
Steps
Line a large baking sheet with parchment paper or a silicone baking mat. Have it ready before cooking because the praline mixture sets quickly after it reaches temperature and is beaten.
In a heavy-bottomed saucepan, combine the dark corn syrup, packed light brown sugar, granulated sugar, evaporated milk, and salt.
Cook the mixture over medium heat, stirring constantly, until the sugars dissolve and the mixture comes to a boil.
Continue cooking, stirring frequently, until the mixture reaches 238°F (114 °C) on a candy thermometer.
Remove the saucepan from the heat. Immediately add the butter, vanilla extract, and pecan halves, and stir them into the hot mixture.
Beat the mixture with a wooden spoon for 2–3 minutes, until it begins to thicken and loses some of its glossy appearance.
Working quickly while the mixture is still scoopable, drop spoonfuls onto the prepared baking sheet.
Let the pralines cool completely at room temperature until firm before serving.
Notes
The source does not specify an exact cooling time; cool completely at room temperature until firm. Work quickly when portioning because the mixture sets rapidly.
