Ingredients
- 8 rebanadas bacon (thin-cut bacon works best; cut in half)
- 16 dates (pitted)
- 4 oz goat cheese (soft)
- toothpicks (to secure the bacon)
Steps

Preheat oven to 350°F (175°C).

Slice the dates lengthwise on one side to create an opening and remove the pit.

Spoon a small amount of goat cheese into the cavity of each date and press the sides to close.

Cut the bacon slices in half. Wrap each date with half a slice of bacon and secure it with a toothpick.

Distribute the dates evenly on a rimmed baking sheet to prevent grease from spilling.

Bake for 10 minutes.

Remove the dates from the oven and use the toothpick to turn each one so it rests on its side. Bake for another 5 to 8 minutes until browned to your liking.

Turn the dates to the other side and repeat baking if necessary to make them crispy on all sides.

Remove from the oven, place them on a plate lined with paper towels to absorb excess grease, and let rest for 5 minutes before serving.
Notes
Pro tip: Use thin-cut bacon so it cooks faster and gets crispier. The bacon should wrap around the date approximately 1.5 times. Variations: You can use blue cheese, feta, or cream cheese instead of goat cheese. For a special touch, mix 1/4 cup of honey with 1 tbsp of bourbon and glaze the dates right out of the oven. Air fryer instructions: Preheat to 390°F and cook for 8 minutes, shake the basket and cook for an additional 3 to 5 minutes.
