Steps
Bring a medium pot of water to a boil. Add the soba noodles and cook for 5 to 8 minutes, or according to the package directions, stirring frequently, until al dente.
Drain the noodles and rinse them in cold water until they no longer feel sticky. Pat them dry with paper towels or a clean kitchen towel, then set them aside.
While the noodles cook, add the olive oil, soy sauce, rice vinegar, toasted sesame oil, and toasted sesame seeds to a large bowl.
Finely grate the garlic into the bowl, then whisk the dressing very well to combine.
Add the cooled noodles and sliced cucumbers to the sauce. Season with salt and toss until everything is evenly coated.
Taste the noodles and adjust the seasoning with more salt if needed.
Transfer the noodle mixture to serving bowls.
Using your hands, crumble the tofu into small, bite-size pieces over the noodles.
Sprinkle additional sesame seeds over the bowls and drizzle with any remaining noodle sauce.
Sprinkle with cilantro and drizzle with additional olive oil, if desired. Serve immediately, or refrigerate in a covered container for up to 2 days.
Notes
The recipe lists Persian cucumbers, with thinly sliced cabbage offered as a substitution; the description also mentions snap peas or grated carrot as crunchy alternatives. Refrigerate leftovers in a covered container for up to 2 days. Nutritional values are estimated per listed ingredient and may differ from the site's published per-serving analysis.
