Ingredients

  • 0.25 cup mayonnaise
  • 2 tbsp white miso
  • 1 tbsp mirin
  • 0.25 tsp pepper
  • 1.5 lb skin-on salmon fillet
  • 1 tsp white sesame seeds
  • 1 tsp black sesame seeds
  • scallions (sliced, for serving)
  • lime wedges (for serving)

Steps

  1. 1

    Heat oven to 425°F.

  2. 2

Line a rimmed baking sheet with parchment paper.

  3. 3

In a small bowl, whisk together the mayonnaise, white miso, mirin, and 1/4 teaspoon pepper until smooth.

  4. 4

Place the 1.5-pound salmon fillet, skin side down, on the prepared baking sheet.

  5. 5

Spread the mayo mixture evenly on top of the salmon without letting the mixture drip down the sides.

  6. 6

Sprinkle the white and black sesame seeds evenly over the glaze.

  7. 7

Roast in the oven until the salmon is barely opaque throughout, about 18 to 22 minutes.

  8. 8

Serve sprinkled with sliced scallions and lime wedges if desired.

Notes

Pair this dish with a bowl of steamed rice for a complete meal. The mayo-miso glaze helps lock in moisture, keeping the fish succulent during roasting.
