Ingredients

  • 0.5 lb ground pork
  • 2 green onions (chopped)
  • 1 tsp chicken powder
  • 1 tbsp oyster sauce
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 2 tsp ginger (minced)
  • 1 tsp garlic (minced)
  • 1 tbsp cooking wine (optional)
  • black pepper (to taste)
  • 0.33 cup low-sodium chicken broth
  • dumpling wrappers (enough for the number of ramekins used)
  • water (for steaming)

Steps

    In a zip-top bag, combine the ground pork, green onions, chicken powder, oyster sauce, soy sauce, sugar, minced ginger, minced garlic, black pepper, cooking wine (if using), and chicken broth.

    Remove excess air from the bag, seal it, and massage the contents until the pork mixture becomes sticky and well combined.

    Push the pork mixture toward one corner of the bag and cut a small hole in that corner to create a makeshift piping bag.

    Pipe the pork filling into small, heat-resistant ramekins until each is about 1/3 full. Gently press the filling flat.

    Place one dumpling wrapper on top of the pork filling in each ramekin. If using thick wrappers, briefly soak them in water for 1 second first.

    Place the ramekins into a pot and add water to the pot until it reaches halfway up the sides of the ramekins. Cover with a lid and steam over medium heat for 15–20 minutes, or until the pork is fully cooked through.

    Serve hot, garnished with chili oil, soy sauce, sesame seeds, or extra green onions if desired.

Notes

Stop steaming as soon as the pork is cooked to ensure the dumplings remain tender and moist. Cooking time may vary based on the amount of filling used per bowl.
