Ingredients
- 4 Beef short ribs
- 4 cloves Garlic
- 1 Onion (Large)
- 4 stalks Celery
- 2 Carrot
- 1.5 tbsp Tomato puree
- 4 Bay leaves
- 6 sprigs Thyme
- 700 ml Beef stock (Use half for cooking and half after removing the vegetables.)
- 500 ml Red wine
- Salt (To season the short ribs and potatoes, to taste.)
- Black pepper (To season the short ribs and potatoes, to taste.)
- 900 g Maris Piper potatoes
- 150 g Salted butter
- 50 ml Whole milk (Use an amount in this range depending on the desired consistency.)
- Salt (To taste, for the mashed potatoes.)
- Black pepper (To taste, for the mashed potatoes.)
- Chives (Finely sliced, for serving.)
- Baking parchment (Folded, trimmed and shaped to fit the pan.)
Steps
- 1
Season the short ribs all over with salt and black pepper.
- 2
Heat a pan and brown the seasoned short ribs to develop good color. Transfer them to a plate and set aside.
- 3
In the same pan, add the garlic, onion, celery and carrot. Let the vegetables sweat down for 5–10 minutes.
- 4
Add the tomato puree and cook it out for about 5 minutes.
- 5
Pour in the red wine and half of the beef stock. Bring the liquid to a simmer.
- 6
Return the short ribs to the pan and add the bay leaves and thyme.
- 7
Fold baking parchment in half repeatedly, measure it against the center of the pan, trim away the excess, and cut off the pointed end. Lay the shaped parchment over the contents of the pan and cover with the lid.
- 8
Bake at 150°C for about 4 hours. Baste the short ribs about once every hour to help keep them from drying out.
- 9
The cook says this can be prepared through the braising stage the day before, but this is optional.
- 10
Take the short ribs out and place them on a separate tray. Remove the vegetables from the pan before continuing.
- 11
Add the remaining beef stock to the pan to deglaze it, then reduce over high heat until the sauce is shiny.
- 12
Return the short ribs to the sauce to warm through, then cover the pan with a lid.
- 13
Prepare the mashed potatoes; the creator says their recipe is in the caption, but gives no method for making them here.
- 14
Finely slice the chives. The creator suggests sprinkling them over a separate tray to keep things tidy.
- 15
Spoon the sauce neatly onto the base of each plate, add a pillow of mashed potato, and place the beef on top.
- 16
Slice the chives and sprinkle them over the plated dish.
Notes
The caption lists ingredients for the mashed potatoes but does not provide their preparation method. It also gives no precise amount for salt, pepper or chives. Braising may be done the day before, though the creator says this is optional.
